Just Eat It: Summer Patio-Q
STRAWBERRY AVOCADO SALAD (photographed above)
1 lb strawberries, quartered
1 avocado, cubed
1/3 lb fresh mozzarella, cubed
zest of 1 lemon
juice of 1 lemon
1 tbs balsamic vinegar
1 tsp olive oil
1 medium-sized radicchio head, chopped
2 cups baby arugula
(1) Mix together the chopped strawberries, avocado, mozzarella, radicchio and baby arugula. (2) In a separate bowl, whisk together the lemon zest, lemon juice, balsamic vinegar and olive oil. (3) Coat the strawberries, avocado, mozzarella, radicchio and baby arugula with the vinaigrette
